Abstract

As pimentas possuem propriedades sensoriais atrativas ao consumidos e contêm muitas substâncias bioativas com capacidade antioxidante, podem ser utilizadas na indústria de alimentos para preparos culinários e aplicações como corantes e aromatizantes. Tendo em vista tais predicados, o trabalho avaliou os parâmetros físicos, físico-químicos, quantificou os compostos bioativos e a atividade antioxidante de pimentas, com disposição de gerar conhecimento sobre as espécies de pimenta. Duas espécies de pimentas, a Capsicum annuum L. e a Capsicum chinense, foram colhidas no município de Vigia, no estado do Pará, foi realizada a caracterização biométrica dos frutos para as dimensões (diâmetro e comprimento) e massa média, a caracaterização físico-química foi obtida quanto ao pH, a acidez total titulável, o sólidos solúveis totais, a umidade, os lipídios totais, as proteínas totais e os carboidratos totais, os compostos bioativos determinados foram a vitamina C, e os compostos fenólicos totais, sua  capacidade antioxidante foi avaliada por método ABTS e DPPH. A pimenta da espécie Capsicum chinense (CC) apresentou maiores valores para a caracterização biométrica, pH,  umidade e  menor valor para acidez total titulável  e atividade antioxidante, as pimenta da espécie Capsicum annuum (CAV e CAA)  obtiveram os maiores teores  de vitamina C, de fenólicos totais e de carotenoides totais, além de  maior atividade antioxidante. As pimentas foram consideradas boas fontes de nutrientes e compostos antioxidantes, a espécie Capsicum annuum L. foi a que apresentou os melhores resultados, se destacando pelo alto valor de vitamina C, compostos fenólicos e consequentemente em uma boa capacidade antioxidante, tal características estudadas possibilitam a aplicação de pimentas na indústria de alimentos.
