Abstract

O objetivo desta revisão é elucidar o uso de probióticos fúngicos em dieta com alto concentrado de grãos energéticos para animais ruminantes. A produção animal tem como um de seus fins atender a demanda mundial por proteína animal, contudo o manejo nutricional de animais ruminantes eleva o custo de produção. Os ovinos, além de serem uma alternativa para a diversificação e aumento da produção animal, têm demonstrado maior tolerância às dietas desafiadoras como a dieta de alto grão (DAG). Nesse sentido, produtores têm buscado manejos nutricionais mais eficientes como a DAG, a qual se caracteriza por ser uma dieta desafiadora que pode conduzir o animal a desenvolver problemas metabólicos quando mal manejada. Esses problemas devem-se ao desequilíbrio simbiótico entre o animal e a microbiota ruminal, sendo esse microbiota fundamental na síntese energética e proteica desses animais. Contudo, trabalhos têm demonstrado eficiência da DAG em animais em fase de terminação confinado. O milho é o cereal mais usado nesse tipo de dieta. No entanto, maior aproveitamento dos grãos está restrito à existência da matriz proteica, que limita a degradação do amido pela microbiota. O uso de ionóforos e antibióticos como aditivos moduladores da microbiota melhorando a ação de degradação têm sido condenados por apresentar resíduos em produtos e subprodutos. Uma alternativa de aditivos que não apresentam efeito residual têm sido os probióticos e prebióticos. Estudos têm demonstrado que fungos ruminais têm ações mecânicas (rizóides) e enzimáticas capazes de romper e/ou degradar a matriz proteica, facilitando as ações das bactérias e protozoários. Dessa forma, pesquisas com isolamento e identificação de fungos ruminais tornam-se fundamentais para investigar o potencial probiótico desses microrganismos em alta concentração em dietas desafiadoras, como a DAG.
